I've missed out on many games so here we go:

Psychonauts on XBox
Shin Megami Tensei (any)
Fatal Frame (any)
Panzer Dragoon Saga
Breath of Fire 3
Breath of Fire IV
Mega Man Zero 1-2-3
Mario Kart GP 1 or 2 (The Arcade)
Kizuna Encounter (Neo Geo)
Yakuza 1 and 2 (Shame, since I love Sega's games)
Alien Vs. Predator (Atari Jaguar)

I too missed the Parasite Eve boat.

I've wanted to play Castlevania: Rondo of Blood, but since it was only on the Japanese PC Engine until it was released on the PSP as Drac X Chronicles, I have yet to play it.

I never did get my hands on Mega Man X3, Super Mario World, or Super Ghouls 'n Ghosts for the SNES...

I would have liked to have played Starcraft: Ghost, if Blizzard had ever released it.

I had gotten a core unit and Zelda III: Link to the Past for my dad for his birthday. He is still a big Zelda nut.

Heck I played the demo of Watchmen, I liked it. It's just a clone of Streets of Rage and it's sweet mindless fun. I'm thinking of buying it for PS3 since you get Part 1 and 2 for $20

Same dude I know who owns Panzer Dragoon Saga, bought a PC Engine Duo-R just for this game. The day he told me he got it in, I rushed over to the next city as fast as I could and spent the night there. We played Dracula X Rondo of Blood NON-STOP! Best 2 days of my freakin' life man :D Such a beautiful masterpiece!
 
Panzer Dragoon Orta was a good one too. I know there is an xbox version. I played it a while back when my college room mate had an xbox.

It was only on Xbox and Japan got this exclusive beauty...it was an amazing sequel by far, I just wish it was brought to a better market.

I don't like the look of that white Xbox. Anyhow, Panzer Dragon Orta can still be found under $10 used. I should pick it up sometime...

Yet we got a white 360...irony...
 
I think 360's look pretty good. It's just that that Dragon Xbox is kind of an off white, like a cream or yellow. I think black with red flames would have been more fitting for an Xbox based on Dragons :D

That's not cream...it's custard I think O.o *eats it* mmmm custard pie :D

I think they should have went with a grey/purple theme like the game itself

It's tough to make a list, because wuth the exception of PC games I've more or less had the opportunity to play every game I've ever wanted. A lot of times its just not under ideal circumstances, but I've still managed to find a way to play them.

If this was a list of games I've always wanted to own but didn't, it would be much longer.
